A limited edition from the Midleton Very Rare Rare Woods Collection, Irish Chestnut Edition celebrates Irish provenance and the craft of single pot still whiskey. It is finished in hogshead casks made from Irish sweet chestnut sourced at the historic Cappoquin Estate in County Waterford.
Created under Master Distiller Kevin O’Gorman, this expression brings together light, medium and heavy styles of single pot still Irish whiskey initially matured in American oak bourbon barrels for between 12 and 19 years. The chestnut finish adds a distinctive combination of sweetness, woodland spice and nutty depth.
Nose: Honeyed red apple, caramelised orange peel, chocolate and toffee, with nutmeg, cinnamon, sandalwood and savoury nutty undertones.
Palate: Sweet orchard fruit and a touch of citrus, followed by vanilla, chocolate, gentle wood tannins and pot still spice. Delicate herbs, pepper and a hint of chilli add complexity to a rich, full-bodied texture.
Finish: Long and lingering, with fading fruit giving way to pot still spice and chestnut wood.
