A mdeium bodied Pecorino with layers of texture and flavours. Fermented in concrete tanks, it undergoes a slight maceration and rest on fine lees for a few months to add a velvety mouthfeel. Fresh peaches, citrus notes an orchard fruits are added to with honey, sage and some well balanced minerality.
The fresh acidity and fuity profile make this a powerful but elegant white wine.
