Fermented initially with Ardennes yeast before being aged for 18 months in Pinot Noir and Chardonnay oak barrels with a blend of Lacto, Pedio and Brett cultures. The barrels were then blended in stainless steel tanks and left to age for 6 months before being bottled with more Brett and conditioned for a further 3 months before release.
Tasting Notes:
Notes of red apples, vanilla and a touch of spice! Strong at 8.2% ABV with a clean, dry finish.
