Type of grape: 100% Pedro Ximénez
Type of aging: The previously sunny Pedro Ximenez grapes are pressed and left to begin fermenting and at the beginning wine alcohol is added until a final graduation of 15%. When not having completed its fermentation, a large part of the sugars in the grape are present in this must, which passes to its traditional system of aging of soleras and criaderas.
Years of barrel aging: 8 years".
