A really unique wine that most won't have tried. The grape is Palomino, used primarily in the production of fortified sherry wine in Jerez, in the south of Spain. More and more producers are now experimenting with the grape to make still dry white, and are succeeding in making fantastic wines.
This wine is a minimal intervention wine, with organically farmed grapes near Cadiz. Fresh and bright acidity is complimented by a lemon peel and grapefruit nose. Fresh apples on the palate with a light to medium body and silky texture. But the real show stopper of this wine is the saline finish.
