Springfield Estate Wild Yeast Chardonnay

At Springfield Estate the philosophy is simple, make wines with minimal intervention and let the fruit do the talking. Here is one of their best examples. This Chardonnay is fermented in cement tanks undeground and can take anywhere from 6-9 months, using the natural yeasts that form on the skin of the grapes. 

This unokaed Cahrdonnay has bright notes of white peach, pear and pineapple. Natural malolactic fermentation occurs and the wine is rested on lees, lending to increased texture anc omplexity. Expect subtle hints of bread dough, and a round lucious finish.
