This single pot still distilled mixed mash bill including malted barley, unmalted barley, oats and rye was initially aged in ex-Bourbon casks from Brown Forman of Kentucky. The barrels were 200L and heavily charred. After this, the whiskey was aged in ex-madeira casks from Justino's. The fortified wine casks were from wines ranging from dry to sweet, offering extra range of flavours and complexity. 

Apples, peaches, honey and oak spice on the nose. Followed by a velvety mouthfeel, peaches and cream, vanilla and walnuts. A long and sweetly drawn crisp finish with spice from the pot still.

Nose: Raisins and figs, with sweet caramel, and a touch of leather.
Palate: A sweet, full and savoury palate with a hint of honey, dark chocolate and white pepper.
