THE REGION

The Guarilihue area of southern Chile's Itata Valley is one of the historic hearts of Chilean viticulture. The vineyards lie close to the Pacific Ocean, where coastal breezes temper ripening. Dry-farmed, bush-trained Cinsault grows in granitic, quartz-bearing soils, producing naturally aromatic wines with balance and freshness.

HOW IT'S MADE

De Martino works with traditional dry-farmed vines in the coastal Itata region. Producer and importer technical notes describe hand-harvesting, destemming, brief pre-fermentation cool maceration, fermentation with native yeasts and careful extraction. Current producer information lists stainless steel maturation to preserve bright fruit and freshness.

Try this red lightly chilled, around 15°C; it is especially versatile at the table. Its juicy red fruit and light tannins make it a lovely alternative to Pinot Noir with salmon, roast chicken, charcuterie or mushroom dishes. Decanting is not necessary.
