On the nose; Apricots, grapefruit and toasted almonds open up to fresh green cooking apples, before warming to apple tatin, lightly spiced calvados caramel creme and a dark fruit compote.

On the palate; Freshly picked green apples, fruit sorbet, soft orchard fruit salad, then raisins, figs and stewed dates from the PX sherry cask influence, and all while that base of sweet malt,  light marzipan sponge cake, and that splendid candied orange.

The long finish is tantalising, with vanilla, clove, spice and the wonderful sweetness of the Pedro Ximinez sherry.
