The brewery was founded 1912 in the prefecture Aomori, in the area of Nanbu. Nanbu Bijin means southern beauty and characterizes the philosophy of the brewery. Using innovative methods lead to the production of characterful sakes. In 2019, Nanbu Bijin successfully acquired vegan certification both domestically and internationally (Japan: NPO Vege Project Japan, Overseas: The Vegan Society), following their acquisition of kosher certification in 2013.
This Ginjo is pasteurized only once and features a dry, fruity freshness that is easy to drink. At the International Wine Challenge (IWC) 2016 this sake won the gold award and a trophy.
